Salad with Style

RAINBOW SALAD with PEPPERS andTOMATOES

The perfect way to get more vegetables into your diet! A bowl of nutrients and fresh flavours!

INSTRUCTIONS:

1.

Prepare dressing by adding everything in a jar with a tight-fitting lid except salt and pepper. Shake until well incorporated and emulsified.

2.

Add salt and pepper to taste. Set aside.

3.

To assemble salad, add salad greens to bowl.

4.

Arrange vegetables in prefered order or just put everything together in the bowl and mix.

5.

Serve with lemon vinaigrette dressing.

INGREDIENTS:

FOR THE LEMON VINAIGRETTE:

1/4 cup fresh lemon juice
1 small garlic clove, grated
1 teaspoon Dijon mustard
1/2 teaspoon honey or maple syrup
1/4 to 1/3 cup extra-virgin olive oil
1/2 teaspoon fresh or dried thyme,
optional
salt and pepper, to taste

FOR THE SALAD:

8 to 12 ounces of salad greens
1 cup cherry tomatoes, sliced in half
6 small radishes, thinly sliced
1 small red pepper, chopped
1 small green pepper, chopped
1 cucumber, thinly sliced
handful of fresh cilantro OR parsley, chopped
